I have someone who I am considering offering a position within the practice to, but think (due to their circumstances and unrealistic career expectations) it might be wise to have a sensible non-compete agreement with prior to them starting.
Does anyone have any experiences (and ideally a template if possible!).

Why?
If you are that concerned about them is this really someone you want to employ to begin with?
I would agree
Unless the individual has other outstanding credentials, why would you want to hire someone about whom you already have serious concerns?
And I think that you'll find that most non-competition agreements are very difficult to enforce. Virtually every employment contract has one, but in reality not worth the paper it's written on.
But if you insist on going down this route, I'm sure that there are readers of this site who would claim to have far greater legal expertise than mine and try to advise you - having said that, I would have thought it better to speak directly to your own legal adviser - relying on advice given on an internet forum can be dangerous.

Not worth the paper
Often such documents are not worth the paper they are written on with enforcement a stumbling block. My advice is to think about something else.
