is it acceptable for new clients to "sign" engagement letter by email - i.e. "I approve the engagement letter dated xyz and agree that it accurately reflects our respective responsibilities and obligations"

I'm not sure where you stand legally with this - it is more a question for a lawyer or your professional body (if you have one).

What I frequently do these days is to get my clients to sign things electronically via Iris OpenSpace, although there are a number of other platforms around.  Iris OpenSpace is free for the first 1Gb of data that you store on it.

Under the Electronic Communications Acts 2000 and Electronic Signatures Regulations 2002, an electronic signature via one of these platforms has the same standing in law as a wet signature.

... personally, I like to see ink on paper for key documents.
