Keep it Simple
Sarah, a verbal contract will likely suffice for your purposes. A fixed price per job would be preferable so that you can add your percentage to cover overheads such as financing the work. The nature of the job will dictate whether the work is carried out on the client's premises or done off-site.

As to the risk of clients being poached, it's almost impossible to draw up a contract to guard against this as the Restraint of Trade laws frequently override what has actually been agreed between parties. Better to demonstrate to your client that you are the right person for the job. In the event that you did lose somebody, it will likely be a fickle client who will be a nuisance anyway.
