Will you still have access to historical data if you don't transfer it? I am not familiar with QB's data access policies but what is their policy for accessing data on lapsed accounts? Do you have perhaps sufficient downloaded records?
You need historical data for two reasons: for your own information and to fulfil your various statutory responsibilities. If you have historical data within your control that meets those needs, then just start on Sage with an opening Trial balance (assuming this is at the start of the financial year and bearing in mind that inevitably it is not quite as straightforward as that especially if VAT is involved).
For invoicing mainly. Sage invoices use Stripe and QB only works with Paypal which charges extortionate credit card payment fees.
Would it be better if I used a totally different invoicing software and then stick with QBO?
Look at Xero then, intergrates with Stripe and GoCardless plus many others.
Dont use Sage, ever.
Are you aware you can migrate data for free from QBO to Sage Business Cloud Accounting?

I wouldn't be too put off by comments about Sage. They all have their shortcomings and to be honest I dislike QBO even more than Sage*. Xero perhaps not quite as much (the jury is out).

Sage online is worse than the desktop version, far worse.
