I was wondering with all the control on cattle movement (animal passports etc) if there was a way to obtain a list of stock held on a farm on a particular date from somewhere like Defra? Might be useful when preparing accounts?

Surely the client holds this as he/she needs to keep records of all livestock movements, births and deaths.

Absolutely DJKL, however, an agricultural valuer will provide an extensive, highly analysed valuation including; the various designations for livestock, produce (silage, hay, grain, straw), purchased stock (feeds etc), fuel oils and cultivations.
The "worth" of a good and well informed agricultural valuer should not be underestimated.
EDIT = duplication
Let's not forget this website is still under construction!
The construction has been ongoing since 3rd May 2016.
In many farming communities, or close by, there are specialist agricultural valuers, who are more than happy to conduct stock valuations.
I have relied on many of these valuations for preparing accounts and, certainly in the cases which I deal with, the valuation costs are extremely efficient.
The NFU may be able to provide pointers, if you don't have local knowledge.
