So I think it's maybe time to work for myself. I'm ATT qualified with lots of tax and general practice experience (almost 30 years!)
So my question is - is there a demand for subcontract tax work? I'm aware that I would need to get a pracitising certificate from ATT and take out insurance plus software and CPD. It goes without saying that I would not be seeking to poach clients from my current employer.

Why subcontract work instead of practising yourself? If you need the PII, CPD and all the software anyway then why not go the whole hog?
You wouldnt need premises. I worked from home for many years and never had a client turn up once! Its about communicating appropriately with them from the outset.
Same here,I meet clients are their premises/home or in a neutral venues, in particular Peacock Alley in the Caley hotel, Edinburgh (Waldorf these days) that does a rather good soup and a roll plus the usual coffee/scones/sandwiches.
The only client who gets into the house is my brother in law.
Find somewhere near you that is appropriate for meetings such that a degree of privacy plus some comfort is available; another one with parking is the Dakota (South Queenferry) for clients from the other side of the water.
