Selling to EU as a non VAT registered company

Please provide advice on how a non VAT registered UK company should sell goods to the EU

We are a small UK based company (not in Northen Ireland), non VAT registered and intending to make small sales of physical goods to multiple countries in the EU (say £5k total per annum) and below the EU 10k threshold.

The customer pays an invoice (no VAT) using our own ecommerce store (not ebay etc) and we want to ship to the EU.  What happens next?  Will the customer get a customs letter asking for VAT or does the 10k threshold cover that?

I assume we don't have to register with OSS or IOSS but it really doesn't make a whole lot of sense!  How do we prove (and to whom) we haven't sold above the 10k threshold.  So please explain what we need to do to keep costs for us and our customers to a minimum.  Many thanks
