Spanish Tax Deductions

Soletrader working for a Spanish co. is having IVA @ 21% and IRPF at 25% deducted from her income.

She isn't VAT registered. Does anyone have any experience with these type of deductions? Do these deductions relate specifically to a sole trader? Or if she were a limited company would they still apply? Where does the double taxation treaty between the UK and Spain fit in? Lastly, is there somewhere that anyone knows of where I can do a course or training / reading to understand this further? Please be nice.

A starting point might be to explain exactly what work is being done and where.

Normal UK resident. Regular to the extent of a couple of times a year.
