I think the standard and professional variants of Sage 50 Accounts should allow you to enter multiple delivery and contact addresses within each Customer record.

If the client is banking multiple cheques for sales invoices they could the Batch Deposit feature? This allows the user to record payments against multiple invoices and is accessed via the Deposit button on the Invoices> Awaiting Payment tab.

The equivalent to T0 in Xero would be Zero Rated Income or Zero Rated Expenses. Xero has different tax rates for income and expenses and it is these that determine which VAT return box the transaction appears in.

Have you considered using Movemybooks? I've not used their Sage 50 to QBO service but the conversions to Xero are generally hassle free. https://www.movemybooks.co.uk/moving-to-quickbooks

No need for a dummy cash account in Xero. A single bank receipt can be matched to both sales invoices and bills by ticking the box for “show spent items” and searching for the (customer) contact. Your client could be shown how to do this?

If you're an Excel novice why not move the manual clients to bookkeeping package that will handle the VAT returns and MTD ?

You could go to the Customer or Supplier list and use the Contra Entries feature. This will allow you to contra the customer and supplier balances by posting dummy customer receipts and supplier payments.
